<Method> 1. Stir cake flour, bread flour, caser sugar, baking powder together until combined. Let it cool in the fridge for 1 hour or more. 2. Pour 1 in a food processor and pulse several times to shift flour. 3. Cut the cold butter into 1cm-cubes and add them into 2, process them until finely chopped (1-2mm) in the food processor. 4. Whisk egg and whipping cream together but not aerated and pour it into 3. Keep pulsing until the dough done. Do not over mix. 5. Roll out the dough into 3cm thick, and rest it for 1 hour in the fridge. 6. Cut out and egg wash. Preheat the oven at 220℃. 7. Bake at 220℃ for 7 - 8 min. and then at 200℃ for 7 - 8 min until golden brown.
